Chicago dog. Chile dog. Why not a Desi dog? That’s the thinking behind chef Pervaiz Shallwani’s stacked hot dogs, a mash-up of his Pakistani heritage and Chicago roots. Shallwani’s Vienna beef dogs come nestled in ghee-slicked buns, stacked with a tangy- sweet-and-sour mix of chaat, chutneys, sev and boondi—a mixture of fried chickpeas—for crunch. As a nod to his hometown, you can also order walking chaat—a Desi spin on a walking taco with corn, poblano chaat and chutneys—as well as chaat-chos, aka chaat nachos.
